The install process would vary depending on the platform you're on.
What device are you using? If you're on a desktop system like Windows, it's as easy as extracting the 7z package obtained from the buildbot page and moving your old memstick folder (where all your settings and savegames are kept) to the new one. On a mobile system (iOS/Android/etc), afaik you can only have one version installed at a time. The best build to pick should always the be the latest one from the buildbot page I linked to earlier on. As far as the settings go, if you've already read GuilhermeGS2's beginners guide and my own performance guide, you should be good to go. The defaults are already actually pretty good.
