UI Background Pic Resolution
What resolution do we need for the pictures? As in, if my phone is 1280*720 with on screen navbar, do I need a 1184*720 image? Do PNGs work?

Yeah PNG's are also supported(in addition to JPG's).

Optimal resolution will have to match whatever area ppsspp ui occupies on the screen, but unless you like a very detailed(aka distracting) image for your background, you shouldn't really worry much since the image will just be slightly stretched if you don't get it right.
